製作康普茶時,可以不用紅茶菇,但需要啟動液(有活菌的康普茶)The SCOPY is not necessary when making kombucha (but starter liquid is required)

Does it need scoby when making kombucha

AI:

No, you do not need a solid, pre-formed SCOBY (the rubbery disc or "mother") to start making kombucha, provided you have raw, unflavored starter tea. [1, 2]
The Difference Between the Disc and the Liquid
  • Starter Tea (The Real Culture): The liquid contains all the live bacteria and yeast (Symbiotic Culture of Bacteria and Yeast) needed to ferment sweet tea. [1, 2]
  • The Pellicle (The Disc): The rubbery cellulose mat that floats on top is actually called a pellicle. It is a byproduct created by the bacteria during fermentation. [1, 2, 3]
How to Brew Without a Pre-Made Disc
  1. Use Raw Kombucha: Buy a bottle of unpasteurized, unflavored store-bought raw kombucha to use as your starter liquid. [1, 2]
  2. Mix with Sweet Tea: Combine cooled, sweetened black or green tea with the raw starter kombucha in a glass jar. [1, 2]
  3. Grow a New One: Cover the jar with a clean cloth and rubber band. Leave it at room temperature. Over 1 to 3 weeks, a brand-new cellulose pellicle will naturally grow on the surface as the tea ferments into kombucha. [1, 2, 3]
Pros and Cons of Brewing Without a Pellicle
  • Pros: You don't need to hunt down or buy a physical SCOBY disc. The microbes in the liquid will build one for you. [1, 2]
  • Cons: Fermentation may start a bit slower, and the initial batch can be sweeter or less carbonated until the new culture builds strength. [1, 2]
You can learn more about growing your own culture from raw tea via guides like Kommbucha or Susan Cooks Vegan. [1, 2]
