Fats and oils are organic compounds that, like carbohydrates, are composed of the elements carbon (C), hydrogen (H), and oxygen (O), arranged to form molecules. There are many types of fats and oils and a number of terms and concepts associated with them, which are detailed further here.

故事是這樣，2024-09-16 週一中午接到副校長電話，下午日本宮崎大學學者來訪，請阿原過去介紹保營系（事實上，上次有做英文中文 越南文的影片，但沒有日文影片）。我說那時間沒有課，我可以，但我不會講日文，只能用英文，長官說沒問題。（當天我跟夥伴們在討論投稿摘要，知道阿原的情況）
特色，當然就說明阿原是台灣第一個把書放到明尼蘇達開放式教科書圖書的人，全世界有四大科放式教科書圖書館，加拿大 BC 及美國三家，明尼蘇達主要放大學教科書（我帶去自印彩色版的橘皮書），我說這是這學生六月畢業，兩年前我們完成這本。
社會學的老師，福島三穗子，問了不少問題，後來討論，才知道她在日本也執行過相似的翻譯，但很挫折。另外一個營養學老師，就問 Codex、台灣、美國數據有何不同，我說沒有背這些數據。另外，我們有引用日本的數據，翻到那頁給她看。
此外，也聊到教學議題，我就分享使用沈浸式翻譯，並找到三月我上有機化學的 YouTube 影片，解釋，這 APP 或外掛，是界面，後面可以使用不同的翻譯資料庫，特色是一段英文一段翻譯文，這樣比對，對學生學習很有幫助（他們對這也有高度興趣）
後來離開，她們把書帶走，我就不好意思去要回來，心想，那本彩色內容還算美觀，資料更不錯，只是需要更新。自費彩印大約一千元，若印 500/1000 本每本可能 100 - 150 元。
沒想到週四我去領包裹，看到她把書寄回來。用英文寫的短信。
我也預計寫部落格，把那天提到的資料，寫出來，回信給他們。
補充：週一介紹，難得我講英文沒有吃螺絲

結論一： @ 我們不知道書出版後兩年，被日本營養學者讀到（放到明尼蘇達網頁，更多人相關領域的人讀，只是我們不知道）。如果當時只有翻譯成中文，而不是雙語寫書，如果當時沒有引用日本資料，
就像 2023-11 讓我心裡很不平衡，有人首次參加研討會發表壁報，就被研討會請來的講者，愛爾蘭皇家科學院院士肯定其整理的工作有創意，一目了然（是的，那個呈現方式就是學生想出來的，我不會去搶功勞）（不平衡的是，阿原一輩子做了很多有創意的事情，沒有長官大學或學者肯定，只有背後捅刀）（從大會簡章，我知道那位國外講者，但沒想到離開輔大前，被我攔截下來看壁報）
---放棄了，或是當時只用中文，不就錯過這樣的機會
---機會是留給有準備的人
---不要算計太多（例如很多博士），傻傻的做，有樂趣的做，後續可能有想不到的驚喜
結論二：講這句這會得罪很多人。是阿原把各位當後段班學生看？還是學生自己這樣看到自己？ 就像我之前說過，我把所有年輕人當台大學生看，只是他們沒有感覺。（至於其他同仁怎麼看我們學生，我沒有意見）

不要來戰，如果您的程度知道中華民國憲法是抄自法國第三共和（然後知道設計給幾億人的西裝，穿在小個頭的身上），再來戰，不然多讀點資料，設法擺脫他人對您的洗腦教育。
孔子的成就，有其價值，這無法否認，但，台灣後來的教育，主要是日本統治，以及國民政府撤退來台帶來的，但，都不是他們原創，而是從歐美學來的。

有朋友反應，我就補充說明。
就像教科書說的， 從漢武帝確立儒家為主流之後，大陸這塊土地，儒家一直被當作執政者用來鞏固其執政合法性的工具。
阿原認為儒家很好，同時，墨家、老莊等，都很好，沒有問題。但，執政者與既得利益者共謀，就是這樣。
舉個例子，現在台灣教育部會要求大家模仿隋唐的考試制度，依照明朝朱熹統整的四書五經來考試嗎？ 當然不會，教育部都在用 AI
反過，一流的教育部及國科會，被既得利益者綁架，對高等教育與研究，無論是一般還是技職，一律使用發表國際上有 SCI/SSCI 點數的論文當作升等及申請經費，這樣跟過去朝代有何不同？只是從四書五經，寫作文（針對考生，不是針對老師），變成針對老師使用 SCI/SSCI 來要求。--對不起，扯遠了。
如果教育部與國科會的評鑑方式 （If they have had done this--文法 if 加上過去式 ），可以面對台灣需要的解決的問題，可以協助產業轉型，可以讓民眾過得安心安全，可以讓新移民及留學生、外籍工作者感受到這是個先進國家，有著先進的制度，不就更好，

There are some translation databases available. I found that the google translate gave me 90% or more correctness on chemistry and organic chemistry. Thus, last year, I used open textbook in chemistry courses.

The reason why we need to use open textbooks?
